Hearty Mushroom Sauce Without the Mushrooms
Today is the first day I've spent at home in at least 2 weeks - maybe longer. I decided to actually cook for my family. My poor husband has been sustaining the family's nutrition while I work late, have meetings and dinner, and come home and work. To put it simply, things have been busy. Anyway, I decided to cook a nice meal -- only to forget that my husband was working tonight and wouldn't get to eat any of it.
I made caramelized onion focaccia bread, hearty beef and wild mushroom pasta sauce over mostaccioli (without the mushrooms because they went bad before I could use them) and lemon rosemary cake. The bread and cake were delicious. Who doesn't love bread and cake? The sauce was smoky, meaty and good, but obviously lacking the mushrooms. And it was supposed to have dried mushrooms. What? Where do you get dried mushrooms? Not in Oklahoma.
And I ate it. On a TV tray. In the living room. And I was so happy to be at home eating on a tv tray in the living room that I couldn't contain myself. And the cake was really good. It only has one piece out of it - so visitors are welcome! You'll probably find me in my pajamas doing chores.
